I’m that kind of friend calling and bugging you at 9 am on a Saturday morning trying to wake the hell out of you. Yes, I’m a morning person, other than lying and stretching in bed reading endless silly tweets on my timeline I love checking out new places in Miami on my own. 9:59 am and I’m already charging the dial button on my iphone waking Hamad up waiting to fill him in on “our” Fresh Market adventure.

I’ve been to this place before, so I’m pretty aware of the shoddy, tinpot surroundings of the market. Clothed myself in the thriftiest sweat pants and t-shirt I could find, and picked up Hamad. Down he comes thinking it was some kind of intricate market, getting into the car looking at me in a gaze of retaliation while I mentioned what the actual junky neighborhood was, and I couldn’t not help glare my teeth with that stupid smile of mine.

Parked outside the metal broken bars and damp wooden shed next to the faulty, damaged meters I came out, ready to lock the doors, but Hamad too busy looking for a place to hide his watch. Looked back, laughed and walked away. In we both entered to a world of no return, vibrant colors blinding the eyes, odors of 30 sweaty farmers seeping through the moistened air, every head turn lead to a tropical aroma from Mangos, to Papayas, to Star Fruits. This is the underground supermarket I’ve always dreamt of, holding a handful of their cheap yellow plastic bags and clutched every fruit and vegetable my eyes were tearing for. Oh, and my expansive love for non-english speakers, they all blabbed around in their own languages on how different we looked walking around taking pictures of their downgraded environment, and my lips wouldn’t stop smiling. Recipes stormed my brain like an open food encyclopedia fat book overwhelmed by the glorious things I’m planning to make. Took the handfuls of bags to the “cashier”, which by the way was a guy with a calculator and a great sense of mathematical counting ability computing all the bags up in an unbelievable 30 seconds. But wait, that wasn’t the shocking part, it all costed $24. What? Sorry? 24 dollars? Are you sure you’re talking to me senior? “Sí sí!” he replied, gave him the money and walked out. Hamad still stupefied not believing the last 30 minutes of his life thinking it was some kind of black market. No Hamad, this is what I call Farmers Market, not the absurd, bland, tasteless, plastic-like fruits and veggies you buy at Publix; this is the definition of “fresh produce”!

Fig Braised Short Rib with Shiitake Mushrooms on Yogurt Mashed Sweet Potato

Classes end, no one called for lunch, no more exams, what do I do? I secretly pass by Milams Market, walk around like a kid in a candy store and just get inspired by whatever’s around calling to be smeared and simmered in what I like to call “My room”… The Kitchen. Not too hungry from that protein bar I had a couple of hours ago, 3 hour Braised Short Rib seems to be the perfect solution as I wait to get hungry.

Went home, pulled the Wusthof off the magnetic knife holder, and vigorously sheared the plastic wrap off them precious short ribs, looked at them with my idiotic grin thinking of the good times we both are gunna spend together. Marvin Gaye music played in my mind, everything went to a leisurely sluggish slow motion while I held the raw rib to my face, reminiscing, closing my eyes and squeezing…. “RING RING!”, oh that damn phone again! I just pretended I didn’t hear it because I know Khaled’s on the other line waiting to ask where “we” were having lunch, and I couldn’t help not hoot in laughter that today’s my day. Khaled, there is no “we” in this equation, it’s just me and Shorty!

Took the short ribs, damped them on the spice powdered rub I had filled with Paprika, Chilli, Rosemary, Salt, Pepper, Cinnamon, Mustard, Cloves, Brown Sugar, and swiftly fried them just to conceal its flavor. Took them out, and added in all vegetables sweating them off, with a couple of sprigs of Thyme. Then the chicken stock gets poured in until it boils, and short ribs get added in that oozing vegetable jacuzzi. Braised for 3 hours while I roamed around pointlessly doing nothing but keep on “tasting” the braised broth. In addition, 2 full tablespoons of fig preserve. Oh God did it make a difference! Ultimate intent sweetness caramelizing the beef ribs, coating a sheer delicate millimeter of sweet tooth satisfaction. On a bed of what you may ponder? Mashed sweet potato with butter folded in tangy Greek Yogurt boosting the whole bland, tacky sweet flavor up a notch, and not shy to offer people a try, happy to bring back Sunday dinner vegetable remains back onto the menu! Oh, and just for the fun of it I lightly braised Shiitake Mushrooms in the rib braised concentrate and drizzled on the rib.

I must say, last night was one heck of a meal, and just be sure to keep yourself updated because I’ve got more coming this way!
